Here is something you should know. That cornmeal from Dancing Dog Farm? The one with all the specks of blue and red in it that makes the best pancakes. That’s not just certified naturally grown in Hotchkiss Colorado. That’s ground by hand. Like in a crank the way you could do after the apocalypse. Ken Vaught is making a seriously artisanal product. He doesn’t even see returns on that corn harvest until the following February after the corn’s had time to dry and to be milled. Ken is very humble about the farming he’s undertaken as a second career after moving here from the front range five years ago, but new to farming or not, the cornmeal as well as his kohlrabi and cabbage are worth checking out when you’re deciding what to buy this week.
