Virtually identical to Bok Choi, Pac Choi has a slightly milder flavor. It is often used as a replacement for Napa cabbage in Kimchi. Choys are actually more delicate when cooked. It can be added to soups, sautéed, steamed and eaten raw. Split in half, drizzle with olive oil, salt and pepper and grill or bake on a cookie sheet for a delightful treat.

The skins are so thin and delicate, we wrap them to keep them crisp; they will last in your fridge for up to two weeks! Each cuke is about 8-12" long.

Garlic scapes are the forming flower that grows from the garlic. It is snapped off each season to allow the energy back into the garlic bulb to develop the garlic bulb more before harvesting. Scapes are a wonderful addition to many recipes including cutting them up into stir fries, making a garlic scape pesto. And we love making garlic scape hummus! Yum. Garlic scapes store well in a paper bag in the refrigerator for a month.

Delicious and beautiful young kale. Prepared like spinach, steam, braise or stir-fry. Kale loves to be in the company of garlic, pork and ginger. Great in soups with potatoes, beans or barley. Caraway and fennel seeds enhance kale's distinct flavor. Blanch; layer with pasta. Add to salads to accent the flavor of other greens. Use as garnish. Ideal for lining salad bowls and vegetable trays as hardy kale doesn't wilt easily. Enjoy simply as a steamed side dish with butter and favorite fresh herbs and seasonings. To prepare, wash and remove the main center vein in each leaf; cut remaining leaf portions into pieces; steam until tender but not limp; rinse under cold water to cool and shake off extra water or pat dry. In a skillet, heat olive oil and garlic; add kale along with vegetables of choice for a quick and easy stir-fry. To store, refrigerate in a plastic bag. Use within three or four days for optimum quality and flavor.

Resembling a colorful celery stalk, this vegetable, in reality is actually a "fruit". The simplest way to prepare rhubarb is to cut the stalks in one-inch pieces add to strawberries and make a pie. Or, cook in just enough water to cover and add sugar to taste to serve as a sassy sauce for meats and poultry or with angel food cake, low-fat desserts and gingerbread. Add raisins, ground ginger or cinnamon. Chef's tip: Before using rhubarb in a recipe, soak in water with a pinch of baking soda to lessen the acidic content to bring out rhubarb's natural sweetness.

Our over-wintered field spinach, so sweet! The leaves are larger, but the taste is fabulous! Use in stir fry's, salad, soup, burritos, scrambled eggs, sandwiches, and wilted spinach salad... And it is sooooo good for you! To make wilted spinach salad, heat a cast iron skillet or dutch oven til it's blazing hot. Put in several handfuls of spinach. Using tongs, gently stir the spinach. When the spinach is "wilted", add a glove of minced garlic, a dash of balsamic vinegar, sprinkle of salt and a drizzle of olive oil. Stir for about 10 seconds or so and remove from heat. Top with roasted pine or walnuts and eat while piping hot!
