Bison meat is higher in protein, iron and Vitamin B-12 than beef.
Cooking with Buffalo
Since buffalo is lower in fat than other red meats, it is easier to overcook. We recommend you cook all bison "low and slow" to no more than medium done. Buffalo has no marbling in the muscle tissue. Expect a buffalo steak to cook one-third faster than a beef steak, buffalo steaks are best when cooked between rare to medium to maintain the moisture and flavor of the meat. Ground bison should be cooked to an internal temperature of at least 160 degrees, Roasts and steaks should be cooked to an internal temperature of 145 - 160 degrees and oven temperature should be around 275 for a buffalo roast.
